Food Scoop: Trader Joe's Pesto Pizza

I had this for the first time for dinner last night. I just have to rave about it because I usually hate frozen pizzas.  This was one of my I'm-so-hungry-and-at-the-grocery-store impulse buys. The only reason I bought it was because it didn't have as much sodium per serving as other frozen pizzas (although 20% of DV is still a lot for most people). I don't really eat high sodium foods so 480mg is totally fine for my diet.

I'm not a huge tomato person, but I love broccoli.  I actually pick tomatoes off of pizza usually, but I love a pesto/tomato combination. This is so yummy and if I remember correctly it was under $4--so if you eat a third for dinner and then a slice with lunch over the next two days like I am, then it's an awesome deal! I love Trader Joe's!

I wasn't going to post my picture of the pizza because I actually stuck it back in for a couple minutes after this so the cheese melted more and then forgot to take another photo after, whoops! This is kind of what it looks like, haha!

 If you're looking for some meal ideas I whole heartedly recommend this!

EDIT: It slipped my mind that Trader Joe's isn't in every state yet. To find out if you have one near you, CLICK HERE to see their locations. If there isn't a TJs near you, I think you could make this pizza yourself, but I'll have to test this to be sure. You would need pizza bread/crust (or Italian seasoned flatbread--yum], pesto [store bought or homemade for less sodium], 1 tomato, a small head of broccoli, and mozzarella cheese.  From there, you'd prep by slicing your preferred amount of tomato and cutting up some small pieces of broccoli. Preheat oven to 425 degrees. I think the broccoli should be steamed before adding it to the pizza (takes about 1 minute in the microwave if you have steamer bags).  Then, spread the pesto on the pizza, toss on the mozzarella, tomato and broccoli. Cook pizza in the oven for 8 to 11 minutes (should be closer to 8 minutes if you make it fresh). Let sit for a couple minutes, slice it up and enjoy!

  2. I *love* Trader Joe's! Their Pita Bite Crackers (the original kind) are addictive! They are my primary grocery store. :-)
